Strawberry Ice Cream

Making ice cream at home requires no special equipment and gives you the freedom to combine your favorite flavours!

Do it like a real ice cream pro like Heston Blumenthal and add 1/2 cup of milk powder to get a wonderfully rich ice cream that is at the same time very light and melts almost instantly in the mouth.

The instructions below are for using an electric hand mixer to break up the ice crystals during the freezing process. The mixture can also be hand beaten using a fork.

Time and patience required. Enjoy!

Tips!

  1. Pour the thickened cream in a large bowl, beat it with a hand mixer until stiff and put aside.

  2. Blend the strawberries until pureed.

  3. Mix the blended strawberries and milk powder together.

  4. Gently fold the strawberry mixture, portion by portion, sweetened condensed milk and lemon juice into the large bowl with cream gently until combined.

  5. Pour mixture in a chilled tray, place film and freeze for two hours.

  6. After two hours, take the tray out and beat the ice cream with a hand mixer or a fork to break up the ice crystals that are starting to form.

  7. Tighten with film again and freeze overnight.

  8. Ready to serve!

1/2 cup Wellshine Wellson

             Whole Milk Powder

400ml Sweetened Condensed Milk

1 tbsp Lemon

500g Fresh Strawberries
